Vickie Kloeris, manager of the National Aeronautics and Space Administration's (NASA) Space Food Systems Laboratory, develops food for shuttle and International Space Station astronauts. (The most popular space food may surprise you.) Kloeris addresses the complex challenges of creating tasty, nutritious, long-lasting, easy-to-prepare meals that support the dietary and psychological needs of astronauts. She also discusses possibilities for gardens in space.
